In Sekiro the story is far more direct, there is a ton of exposition and narration in the beginning, you play as a defined character protagonist. So the distinction is quite obvious. Review - Sekiro: Shadows Die Twice - WayTooManyGames
Don't get me wrong, Sekiro's story may be more focused, but it's certainly no Uncharted. There are plenty of plot lines, special endings, and story tidbits that are completely missable if you don't explore, find special objects, or complete tasks in a certain order. In FromSoftware's typical fashion, it will be impossible to complete all story lines and quests with a single playthrough.
